Recipe: Berry and Chocolate cupcakes

As it's national cupcake week, I thought it only right to get baking some!
The children have been picking blackberries from the garden this week and I'd been looking for something to do with them so decided I'd make my cupcakes berry ones.
And to me, nothing works better with berries than a bit of chocolate. 
The blackberry ones were so yummy I got the raspberries the children had picked from the garden in the summer that I had frozen, out to use too.
This recipe uses one batch of cake mix to make two different cakes (approx 12 of each) - Milk chocolate chip cupcakes with fresh blackberry frosting and white chocolate chip cupcakes with fresh raspberry frosting.

INGREDIENTS (Makes approx 24)
For the cake batter:
226g Self raising flour
226g Butter
226g Caster sugar
4 Eggs
1 tsp Vanilla extract
2 handfuls of white chocolate chips
2 handfuls of milk chocolate chips

For the frosting:
150g Blackberries
150g Raspberries
225g Softened butter
900g Icing sugar

1. Preheat the oven to Gas mark 3/ 170C and fill 2 muffin trays with 24 cake cases.

2. Cream the butter with sugar. Once well mixed, add the vanilla extract, flour, then eggs. Mix well.

3. Fill each cupcake case with the cake batter approx 2/3 full and then scatter in the chocolate chips. 12 with white and 12 with milk.

 4. Bake for around 15 minutes, until golden brown on top and leave to cool.
Cooked cupcakes.
5. Set aside 12 blackberries and 12 raspberries to decorate the top of the cake. Sieve the rest.

6. In a separate bowl, cream the butter and icing sugar together until well combined. Add the blackberry purée to one half and the raspberry purée to the other. Spoon each mix into a piping bag and pipe swirls on top of the cooled cakes - raspberry on the white chocolate ones and blackberry on the milk chocolate ones. Decorate each cake with a fresh berry.

A perfect activity for us too as it doesn't seem to have stopped raining for a few days. I've also got a little trick where if you freeze the chocolate chips before adding them to the batter they hold their chunk a little more, that's just if you fancy added chocolately texture to your batter.
