Recipe: Salted caramel & apple cupcakes

So, we've done the caramel apple crumble, now's time to use up some more autumn apples from the garden, keeping with the caramel theme, but this time in yummy cupcakes.

The apples make the cupcakes deliciously sweet and moist.

And what makes these cupcakes extra special is the gooey salted caramel centre.


125g soft butter
125g Golden caster sugar (You can use normal caster sugar but golden caster adds a nice caramel taste to the cake.)
125g Self raising flour
2 eggs, lightly beaten
2 x eating apples, peeled, cored & cubed
Dr Oetker Salted caramel cupcake centre

240g soft butter
480g icing sugar
1 tbsp milk

To decorate:
Dr Oetker Salted caramel crunch pieces
Dr Oetker Cocoa crunch squares


1. Preheat the oven to 180C and line a 12 hole muffin tin with cases.

2. Put the apples into a saucepan with a splash of water and cover. Cook for 5-10 minutes, until soft then mash to a consistency of your choice. If you want a few apple chunks, mash less, if you just want apple flavour, mash until smooth.

3. Cream the butter and the sugar together.

4. Beat in the eggs a little at a time then add the apple mix.

5. Fold in the flour until smooth.

6. Spoon into 12 cases 3/4 full and cook for 15-18 minutes, until golden and springy on top.

7. Leave to cool for a minute or two, then push the Dr Oetker Salted caramel into the centre of each cake and squeeze.

8. For the buttercream, beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth. Then add the remaining half with the milk and mix until smooth & creamy. Spoon into an piping bag and pipe swirls onto each cake.

9. Decorate with the Dr Oetker salted caramel crunch & cocoa crunch squares

  7. These look delicious! I love caramel, so I'm sure I would love to try these! I've never seen the pouches you can squeeze to easily add flavour inside the cupcake, that's a great idea! Will have to look for these Dr Oetker products to try it for myself.
