Recipe: Slow cooked smoky sausage & bean casserole

This has to be the most flexible recipe I use and is always my 'go-to' meal on busy days and to use up what's lurking in the fridge. As long as you have the sausages and the basic sauce, you add whatever else you like. Each time I do mine it's different as I always just use what's there!

And best of all. The kids love it!

A real autumn/ winter favourite in this house.

This recipe feeds a very hungry family of 5 piggies.

It fills my slowcooker to the brim.

Browned sausages 
(how many you put it depends on how many you think everyone will eat. I normally use a large pack of the chipolata ones. You can use any sausages that take your fancy too - cumberland/ lincolnshire/ harrogate)
2 x 400g tins of chopped tomatoes
3 x chopped cloves of fresh garlic/ lazy garlic. I used fresh.
1 x chopped red or white onion. I used red.
Or you can use the tins of tomatoes with onion and garlic already in.
1 tbsp worcestershire sauce
1 tbsp tomato puree
2 bay leaves
Remember to pick these out before serving
Salt & pepper to season
100g chopped chorizo
Normal or spicy. I used normal as it was for the children too and they aren't as adventurous with hotter foods as me!
1 x beef stock cube
Not in water, sprinkled into the slowcooker.

You can choose any of the following vegetables to go in your casserole. I normally choose 3 or 4 different ones. I used the top four in mine. A handful of each.
Green beans
2 x sliced yellow pepper. Or red, green, orange!
Baby sweetcorn
Sugarsnap peas
Runner beans
Sweet potato
Butternut squash

Choose any 2 x 300g tins of the following:
Butter beans
Cannellini beans
Kidney beans
Borlotti beans
Mixed taco beans
You can use baked beans if you would prefer. If you do, only add ONE tin of chopped tomotoes to the sauce.
If you like a little heat, you can also add the beans in chilli sauce instead. If you do this, again, only add ONE tin of chopped tomatoes in the sauce.

Pop everything into the slowcooker and cook on low all day,6-8 hours.
The mix will seem a little 'dry', as in there is a lot of vegetables and beans to not much sauce, but the moisture kept within the slowcooker will add to the mix and make it more wet.

Serve with Crusty bread or mashed potato
