These cheese & bacon muffins make a lovely change from all the sweet baking I do and are perfect for a breakfast on the run or lunchtime accompaniment.
Yummy and healthy too!
This recipe makes 9 large or 12 small muffins.
INGREDIENTS
250g self raising flour
150g strong cheese, grated (the ready grated packs you can get from the supermarket are great for this - I used the four cheese mix)
1/2 tsp salt
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp turmeric (optional)
1 tsp mustard powder (optional)
3 rashers of cooked bacon, chopped into pieces
100ml natural yoghurt
100ml milk
2 eggs
METHOD
1. Preheat the oven to 200c and line a muffin tray with cases.
2. Mix the flour, cheese, bacon pieces, salt & pepper and spices in a bowl.
3. In a seperate bowl beat the eggs and add the yoghurt and milk.
4. Make a well in the dry ingredients and add the wet mixture. Mix gently but do not overmix. The mixture should be lumpy and just falling off the spatula. If not, add a bit more milk.
5. Spoon into 9 large or 12 small cases and bake for 15 minutes, until golden.
