Christmas day starter recipe: Honeyed carrot soup with root vegetable crisps

This soup is so very easy to make and so incredibly yummy.

The sweetness of the carrots is enhanced perfectly by the honey and the addition of chilli flakes (optional) adds a new depth and lovely heat perfect in winter.

This soup makes the ideal Christmas day starter, made all the more special served with home made root vegetable crisps.

A winner with both adults and children alike.

2 tbsp butter
1 large onion, diced
800g carrots, roughly chopped
2 tsp honey
pinch dried chilli flakes (optional)
1 bay leaf
2 litres vegetable stock

To serve: Natural yoghurt, chopped coriander and vegetable crisps (follow the recipe HERE)

1. Melt the butter in a large pan over a medium heat. Add the onios and cook for 3-4 minutes until starting to soften. 

2. Add the carrots, honey, chilli (option) and bay leaf and cook for a further 2 minutes.

3. Pour in the stock and bring to the boil. Reduce the heat to simmer for 30 minutes.

4. Blend the soup and season to taste.

5. Ladle into bowls and serve with a dollop of yoghurt, some chopped coriander and the crisps.
