Recipe | Unicorn 'Freakshake' cupcakes



When I was sent these Dr Oetker Unicorn wafers & sprinkles, I just new they deserved a absolutely awesome cupcake to majestically sit upon!


I happened to find some mini unicorn donuts in Home bargains at the weekend and I thought they would make great, if not extremely unnecessary and extravagant cupcake toppers. 

And there is kinda nothing more extravagant than a freakshake right?

Milkshake, icecream, sauces, sprinkles and donuts. What more could you want?

So here is my take on a freakshake in cupcake form.


They are yummy strawberry milkshake flavoured cupcakes topped with ice-cream flavoured buttercream, swirled with strawberry sauce.

Not forgetting those extremely extravagant donut toppers, unicorn wafers (the rainbows come in the same pack!), unicorn sprinkles and a little paper straw to complete to freakshake look.


RECIPE
Makes 12 cupcakes

INGREDIENTS

For the cupcakes
200g Butter
200g Strawberry milkshake powder (like nesquik)
200g Self-Raising flour
3 large eggs

For the buttercream
420g Icing sugar
180g Softened butter
1 tsp Vanilla extract
50g Vanilla ice-cream
Strawberry sauce

To decorate
Dr Oetker Unicorn wafers
Dr Oetker Unicorn sprinkles
6 Paper straws cut in half
12 mini donuts

METHOD
  1. Preheat the oven to 180c and line a muffin tin with 12 cases.
  2. Beat the butter until light and fluffy.
  3. Add the milkshake powder and combine.
  4. Add the eggs and combine.
  5. And finally add the flour. Beat well.
  6. Spoon equally into the cake cases and bake for 25-30 minutes until golden.
  7. Once cooked, cook on a wire rack and start making the buttercream.
  8. To make the buttercream, Beat the butter and vanilla in a bowl until light and fluffy.
  9. Add the icing sugar and beat on low until combined.
  10. Add the ice-cream. Beat well.
  11. Grab a piping bag and squirt some strawberry sauce down the sides to form lines down towards the nozzle then spoon in the buttercream.
  12. Pipe swirls of buttercream onto the cooled cakes.
  13. To finish, sprinkle the unicorn sprinkles over the buttercream, push in a paper straw, pop a donut over each straw and push a unicorn wafer slightly into the buttercream.
