Budget friendly family recipe | Cheesy Chilli Beef Quesadilla's

Quesadillas are probably one of the most versatile meals I do and the children love them!

Like a little Mexican style toastie, you can literally add any filling your heart desires so it's especially great for using up leftovers. Which of course also makes this a budget friendly dish.

Our family favourite filling is cheesy chilli beef, which works out to around £1 per serving (with ingredients bought from Aldi)

It's kind of like a mash up of our favourite meals - chilli and lasagne.

Using the same spices I put into my chilli to flavour the mince beef and some tomato puree really gives it an intense taste, combined with melted cheese and mascapone oozing through is a total winner.

You can serve the Quesadillas on their own as they are plenty filling enough or with salsa/ guacamole/ sour cream, a side salad or some savoury rice.

Serves 4-6


3 tbsp Tomato Puree
1.5 tsp Ground Cumin
1.5 tsp Ground Coriander
1.5 tsp Chilli Powder (we use mild because of the children)
1 tsp Smoked Paprika
Splash of Water
500g Mince Beef
1 Red Pepper, finely diced
1 Onion, finely diced
4 Tortilla Wraps
250g tub of Mascarpone
200g grated cheese


  1. To make the chilli beef: Brown off the mince in a pan before adding in the peppers and onion. Soften for a few minutes then add in the spices and tomato puree. Mix well then add a splash of water to the mixture to loosen it but not make it too wet. We don't want it slopping out of the quesadilla too much and the melted cheese and mascarpone will loosen the mixture further later on too. Heat until hot.
  2. Whilst the chilli mince is cooking, spread one side of each wrap with mascarpone.
  3. To assemble: Put a wrap, mascarpone side up in a large frying pan. Sprinkle over a layer of cheese, then a layer of the chilli beef, then sprinkle over more cheese before putting another wrap, mascarpone side down on top.
  4. Heat the quesadilla for 3-4 minutes in the frying pan then put under the grill for another 3-4 minutes to crisp up the top.
  5. Cut into slices to serve.
